One of the main goals of creating a program like GAC Business Innovation program was to create hands-on learning experiences for students and creating a real-life environment to learn about entrepreneurship. The Spartan Café is one of the ways we are ensuring students gain that experience.

The Business Lab, the highest level of this program, is a year-long internship with students who serve as the leadership team for the on-campus Spartan Café. Their roles mirror real-world positions in business and corporate settings, giving them full ownership of operations while mentoring peers in lower-level Business Innovation courses. This hands-on responsibility allows them to build independence and expand their understanding of what it takes to run a successful business.

Dr. Stephen Carter, leader of the Business Innovation Program at GAC, says “the difference with a program like this here at GAC is they're not just learning about these in an echo chamber. They're learning the content then they get to go directly apply it at the Spartan cafe.” 

As CEO, Alivia Rasler provides overall vision, direction, and accountability, staying in the know about all aspects of the Café and serving as its spokesperson. Alex Duncan serves as COO where he manages daily operations and systems such as inventory and scheduling, thriving in this behind-the-scenes role. CFO, Robert Link, tracks revenue, expenses, and profitability, for the Spartan Café. As CMO, Elijah Proctor oversees the brand identity and customer communication. Sam Randolph serves as CIO where he drives creativity and quality as Chief Innovation Officer, developing new drink ideas and menu items. CPO, Kendall Thomas, focuses on people, handling recruitment, training, and fostering a healthy team culture. Finally, London Knight serves as CCO, the Café’s communicator, that gathers customer feedback, manages public relations, and reports stakeholder perspectives back to the team.
